RECIPE OF THE WEEK

This is one of our favorite salads next to the strawberry one. I make this every time we go to Flaming Gorge.

Chinese Chicken Salad

6 tablespoons canola oil
2/3 cup sugar ( I use splenda )
1/2 cup seasoned rice vinegar-original ( the brand is Nakano )
4 tablespoons soy sauce

1 bag of coleslaw
1 small bag of carrot slivers
1/2 -3/4 cup of almond slivers
2 bags of the top ramen noodles crunched ( throw out the seasoning )
1 bunch of green onions, chopped
2 cups of dice chicken ( I just buy a rotissere chicken from costco )

Combine oil, sugar, vinegar, and soy sauce in shaker. Shake to mix well.
Mix remaining ingredients together and toss with dressing. Serve immediatly. You may not need all the dressing.

This is one of Kurtis' favorite meals. I may have to take your advice and make it with the roasted chickens from Costco. The chicken is the hardest part, so that would make it super easy!
